It basically means that if you're good at something, you do it out of habit [so you're not doing it on purpose, per say.]. Edward is the most perfect hu-- ...well, not HUMAN being, but he's perfect in every way, and therefore the quote suits him. =D

I had to read it over several times before I understood what the quote meant. ^^;
